Green Chicken Enchiladas

Green Chicken Enchiladas are easy and delicious with tender chicken breast meat, beans, corn, spices, and cheese rolled in flour tortillas, smothered in salsa verde Greek yogurt sauce.

– Salsa verde – Greek yogurt – Chicken – Black beans – Corn – Green onions – Green chilis – Seasonings – Monterey jack cheese – Flour tortillas


Combine chicken, beans, corn, onions, chilies, and seasonings. 

Combine salsa verde and yogurt. Add some to the chicken mixture with the Monterey Jack cheese. 

Roll the mixture in the tortillas. 

Spoon sauce in the bottom of a baking dish. Arrange enchiladas over the sauce. 

Pour sauce over the enchiladas and cover with cheese. 

Cover and bake 25 min. Uncover and bake 15-18  more min. 

Top with black beans, corn, tomatoes, green onion, and parsley.
