Lemon Blueberry Cookies

Soft and chewy Lemon Blueberry Cookies are naturally purple from fresh or frozen blueberries, studded with white chocolate chips, and rolled in lemon sugar.  They're the best cookie ever.

– Blueberries  – Butter – Granulated sugar – Egg – Lemon juice & zest – Flour – Baking powder – Cornstarch – Salt – White chocolate chips


Microwave blueberries about 2 min until they burst. Cool. 

Combine sugar and lemon zest in a small bowl. Set aside. 

Cream butter and sugar. Mix in egg, then blueberries, lemon juice, and zest. 

Sift in the dry ingredients and mix until just combined. Mix in white chocolate chips.  

Scoop dough into balls. Roll in lemon sugar and place on baking sheet.

Bake at 400 for 9-11 minutes.
