Chicken Zucchini Casserole 

Chicken Zucchini Casserole tastes like summer with zucchini, tomatoes, pesto, and rotisserie chicken and a Parmesan, garlic, and herb Bisquick topping.  Easy dinner recipe for busy weeknights

– Zucchini – Onions – Cooked chicken – Mayonnaise – Pesto – Mozzarella cheese – Grape tomatoes – Bisquick mix – Seasonings – Parmesan cheese – Eggs – Milk


Sauté zucchini and onion until tender.

Combine zucchini mixture with chicken, mayo, pesto, and mozzarella.

Spoon chicken mixture into baking dish. Top with grape tomatoes.

Whisk together Bisquick, seasonings, green onions, Parmesan, eggs, and milk.

Pour Bisquick mixture over the chicken mixture. Bake until golden brown.

Serve with additional Parmesan and tomatoes. Enjoy!
