Baked sweet potatoes are easy and delicious.  Crispy taco-seasoned chickpeas add spicy crunch and the avocado crema cools it down. Build a fun toppings bar and let everyone make their own creation!

• Sweet potatoes • Chickpeas • Olive oil • Chili powder, cumin, paprika, oregano, garlic powder & cayenne • Cherry tomatoes • Corn • Cotija or Feta • Green onions • Salsa verde


• Avocado • Greek yogurt • Lime • Parsley or cilantro

Avocado Crema

Toss chickpeas in oil and seasonings. Place chickpeas and sweet potatoes on baking sheet and roast for 45 minutes. 

In a food processor or blender, process avocado, Greek yogurt, lime juice and zest, and parsley.

Cut an x on each potato and pull back the skin. Stuff with crispy chickpeas, avocado crema, corn, cherry tomatoes, salsa verde, cotija, and green onions.
