Asparagus & Snap Pea Salad

Roasted Sugar Snap Pea and Asparagus Salad is a bright and flavorful spring vegetable salad tossed in a roasted lemon vinaigrette.  An easy and healthy side dish you can make in about 15 minutes.

– Asparagus  – Sugar snap peas – Olive oil – Salt and pepper – Radishes – Green onions – Feta cheese – Sliced almonds – Lemon  – Garlic – Dijon mustard – Honey – Olive oil


Place peas, garlic, and lemon halves on prepared baking sheet and broil for 10 minutes.

Spread asparagus in single layer on second baking sheet and broil for 5 minutes.

Whisk lemon zest, lemon juice, minced garlic, Dijon, honey, olive oil, and salt and pepper until smooth.

Toss the peas, asparagus, and radishes with the citrus vinaigrette.

Top with sliced green onions, slivered almonds, and feta. Serve and enjoy!
